Mexican Restaurant Recipes: More Than Beans and Tortillas Now

By Sarah Sandori Have you noticed that Mexican restaurants are branching out in their menu offerings? I have. I remember a newspaper cartoon from years ago in which the main character ruminates, somewhat forlornly, on the fact that Mexican restaurants had dozens and dozens of dishes, but they were all just variations on beans and tortillas. Today that's not the case. Oh, sure, you can count on finding your standard offerings of enchiladas, burritos and tamales at any Mexican restaurant you drop into anywhere in the country. I've had an enchilada in Alaska that was indistinguishable from one I might get in Texas, Florida or North Carolina. But lately I've noticed some unusual dishes creeping onto the menus of my local Mexican restaurants: Chicken baked in banana leaves, a specialty from the Yucatan peninsula. Hearty beef stews containing nary a single bean (although they do often come with strips of tortilla floating in them). Even cactus, cooked or chopped for salads. I think what is happening is three things. One, Americans are becoming more cosmopolitan in their food tastes and are more willing now to try new and exotic dishes. Two, the explosion in the sheer number of restaurants means that these businesses must constantly tempt us with new food experiences in order to keep our business. Three, the influx of people from Mexico into many areas of the U.S. means that restaurants have a ready-made clientele for more traditional dishes that heretofore were absent from menus geared strictly to American tastes. As a Mexican food aficiando, I welcome this trend. It means more new dishes to sample as well as to try to duplicate at home. Yum! A rod is a long pole that works just like a lever, for you to catch fish. While your grandparents may have used rods from cane, these days theyre usually made out of fiberglass, graphite, or another kind of composite material. Most rods come equipped with a reel-holding clamp and guides through which the line will run, but youll have to purchase the reel and line separately. In the mean time, choose among the different designs for different tasks, including rods for boat fishing, jetty or pier fishing, or bait casting. The reel is a machined device. Basically, it holds and spools the fishing line, but its design will differ depending on the kind of fishing you plan to do. A casting reel has a revolving spool; a spinning reel allows the line to coil off a stationary spool; a spincast reel looks like a spinning reel but it has a nose cone; and finally, a fly reel stores the thick line used for fly fishing. Reels will come equipped with a line spool, a brake to slow running fish, a handle so that you can reel back your line, and a foot that allows you to clamp it to a rod. So whats fishing line? Line is the special filamentusually, nylon, although some are also available from braided fibers and wirethat you use to fish. Fly line, however, is a specialized plastic coating around a core material; and fly line is often tapered (meaning that it changers diameter from one end of the reel to the other) to make it easier for you to cast. By Frann Leach Ever wondered why low-carb diets work really well for 6 months, and then quite often, with no change in eating pattern, the weight piles back on again? Seems we may be missing something here. One fact that may be relevant about low-carb is that in the process of cutting out the carbs, most people end up drastically reducing their gluten intake. Gluten intolerance, when ignored, can end up preventing certain nutrients from being absorbed, leading to that feeling of needing to eat, even though you just had a meal. The body knows it's missing something, so it triggers a craving for more food, even though it's not calories (energy) it needs. When someone who is gluten intolerant stops eating gluten, their ability to absorb the nutrients in food gradually improves. In general, by cutting out gluten you will also end up eating more of the types of food that have a high nutrient value - it's well known that you don't get much goodness from a cake or a biscuit, for example, so that leaves more room for good stuff like fruit, nuts or vegetables. Even cutting down your gluten intake, if you are sensitive to it, can improve your health by making more of the nutrition in the food you eat available to you. Unfortunately, if you don't cut it out completely, you may end up reacting again, even to the reduced amount. Your body gets back into the cycle of needing nutrients that you take in, but which it's unable to absorb because of chemicals created by undigested gluten. Sports nutritionists often recommend high-carb foods like pasta for a quick energy boost before a workout. But many people feel bloated and decidedly lacking in energy after eating this type of food. Carbs may give you energy, but only if they are the right sort of carbs. For those who are gluten intolerant, pasta and other wheat-based products won't boost their energy levels at all, because they are unable to absorb it properly. Why am I going on about this stuff? It's because a couple of years ago I discovered I was gluten intolerant. So, as I don't like constant pain, I cut out gluten, which wasn't easy, I have to say, at least not to start with. And ever since then, with no effort on my part, I have consistently lost a couple of pounds a week - which I had been trying to do without success for years before that. Dieting didn't work. Exercise didn't work. Cutting out gluten (and actually eating more than I had before) did. It made no sense to me. But now, having researched it, I can see what is probably happening. I laid it all out here, so you can understand it, too. There are some researchers online (they are a bit thin on the ground, I have to admit) who think that obesity is caused by malnutrition. Sounds like saying turning the lights on makes it darker doesn't it? But as I've shown, it can make sense, and is definitely worth thinking about. So if you are struggling to lose weight, it must be worth finding out if you might be gluten intolerant, preferably before you get to the stage where that nasty label 'obese' gets stuck on you. By Margaret Paul, Ph.D. As a counselor, I am often asked, Can drugs be helpful for anxiety and depression? The answer I give is Yes and No. Yes, drugs may be useful for short-term help. No, drugs are not a good long-term solution. Anxiety and depression are not caused by a lack of drugs. Drugs do not heal the underlying causes of anxiety and depression. However, when drugs are temporarily used to give a person a window of relief to do the inner work necessary to heal the underlying causes, they can be useful. Anxiety and depression generally have two major underlying causes - emotional and physical. THE PHYSICAL CAUSES OF ANXIETY AND DEPRESSION Our bodies go into imbalance when we do not eat well or have enough healthy exercise. Our bodies are not made to handle the unnatural substances found in processed food. When we overload our bodies with chemicals, pesticides, sugar, and devitalized foods, our bodies become depleted of vital nutrients and go into stress. Anxiety and depression can be the result of this physical depletion and resulting stress. Our bodies are designed to thrive on the food and water that God gave us pure, clean, organic, unaltered food and water. If you take drugs for anxiety and depression and do not clean up your diet and get proper exercise, you are just using a Band Aid for a gaping wound. THE EMOTIONAL CAUSES OF ANXIETY AND DEPRESSION Emotionally, anxiety is caused by dysfunctional thoughts thoughts that are not true. For example, if you tell yourself that you are not good enough or you have to be perfect, you will likely feel anxious. Thoughts of not being good enough and having to be perfect are generally focused on our outer qualities of looks and performance, rather than on the inner qualities of kindness, compassion, and gratitude. When we choose to be kind, loving and compassionate with ourselves and others, we feel good about ourselves. When we choose gratitude for what we do have rather than dwell on what we dont have, we create inner peace. Kindness and gratitude are wonderful antidotes to anxiety! Anxiety is always a sign that we are telling ourselves a lie. The truth creates peace inside, while lies create fear and anxiety. This is a sure-fire way of knowing what is true and what is not true! Emotionally, depression is caused by not taking good care of ourselves. If we ignore our needs, dont speak up for ourselves, judge ourselves, and make others responsible for our feelings, the result may be depression. If you have a child whom you ignore and judge, that child will likely be depressed. The same occurs on the inner level when we ignore and judge our own inner child. Putting yourself last and taking care of everyone else but yourself may cause you to feel unworthy and depressed. There is little point in taking drugs for anxiety and depression without attending to your dysfunctional thinking and to how you are treating yourself. However, if you take drugs for a short time and give yourself the opportunity to do your inner work, they may be helpful. Many of the people I work with find that as soon as they start taking good care of themselves, they dont like the effect of the drugs. They dont like the fact that the drugs take the edge off their feelings. They find that, rather than wanting to be numbed out, they want to feel all of their feelings deeply, both the highs and the lows. The more they learn to take responsibility for their feelings by attending to their thoughts and needs, the more they want to feel all of their feelings. They discover that, while drugs may take the edge off pain, they also take the edge off joy. Most of the people I work with can avoid drugs completely by learning to take loving care of themselves, both physically and emotionally. Many of the people who practice the Inner Bonding process that we teach find Inner Bonding to be far more powerful in healing anxiety and depression than drugs. If you are a person who does not want to learn to take personal responsibility for your pain and joy, then drugs may be a way out for you. But if you want to feel true peace and joy, drugs are not the answer. This is simply not true. Truth be told, all of us have the capacity to earn far more than we realize. This occurs because the companies we work for are experts at obtaining expertise in the most economical way possible. Each time you interview for a job or even offer up your services as a freelancer you are subjected to a purchasing process that is designed to obtain your expertise as cost-effectively as possible. You hear expressions like, Our budget only has $X allocated for this position. Many times you will hear, Our offer is comparable compensation for your position in the industry. There is a five-step process that you can follow that will help elevate the discussion beyond the traditional discourse that is designed to suppress your earning power. Here are the five steps designed to unlock your true earning power. Cultivate your expertise. You must begin by understanding where you have deep knowledge or performance excellence. Ask yourself what you can do better than anyone else you know. After you have determined your expertise you need to work at it. Hone your craft. Take classes to make certain that you are up-to-date on the latest innovations in your area. You are looking for a personal center of excellence. Step back and view your personal center of excellence from an outsiders perspective. Would someone who didnt know you look to you to solve a problem in this area? Here is a helpful tip we almost always undervalue our expertise. Find a problem to solve. Seek out companies or clients who have problems in your personal center of excellence. If you are a marketing genius, look for a firm that is having trouble positioning its product or service. If you are a manufacturing expert, find a company that has a quality product and cant get it to market quickly. These issues are easy to find. There are articles about them each day in the local newspaper. In many cases you can find problems to solve simply by becoming a customer of a fire you want to work with. The next time you are in a restaurant, look around and think about the things you would do to make it better. This is the mindset you need to embrace as you look for problems to solve. Find the decision-maker. The next step is to find out who has the most pain as a result of the problem you have uncovered. In many cases it is the leader of the business. Leaders are most often compensated (at least in part) based upon the performance of the work group. They often have the most to lose from an operation that is broken. You goal is to get a meeting with the decision-maker (the person with the most to gain from an interaction with you). This will require confidence and persistence. You will need to be pushy but professional. Always keep in mind that you want to help this person. Your aggressive solicitation of a meeting is for the good of his business. Dollarize your solution. When you finally get a meeting with the decision-maker you will need to succinctly demonstrate how you will help him make more money. This has to be personal. You will need to show him how it will benefit him (through making the business better). The best way to do this is to show the decision-maker how much he will save (or how much profit he will make) through working with you. As you make this presentation, be sure to use real examples from your past work. If possible, find out how much the current problem is costing his company. Show him how much he will gain if you help take the problem away. You should make the argument that even partial solutions are better than the current state. Move in for the kill. Once you have shown the decision-maker how much money he will realize by working with you it is time to present your fee. This is the salary that you desire for this position or your actual fee if you are an entrepreneur. Your argument in this case is that the business will realize an exponential multiple from your work. In other words, there is a significant return on investment (ROI) for hiring you. If you desire a salary of $100,000 you should show the decision-maker how you will drive a minimum of $600,000 in profit each year you work with him. Most of us can do far better than that but even a 500% ROI is significant. Following this process is not easy. It takes time, discipline and practice but in the long run you are your best investment. The stereotype of a bachelor party is a last night of debauchery for the groom and his friends before the wedding but in more recent times soon to be grooms are looking to less traditional activities to mark their final days as bachelors. Your book selling, book marketing, and book promotion planning should begin well before your manuscript is completed. In today's publishing marketplace, the success of a book entirely depends on a strong marketing plan. Make sure you have at least one good timeless press release, written in AP style. You can send it out for the lifetime of your book. Make sure it's written in a timeless fashion. Using press releases can be a very effective marketing tool if used properly. Press releases can generate thousands of dollars in sales when picked up by national trade or print media.
